Instant Pot
I was texting with my sister-in-law and she was telling me how much her and my brother love their Instant Pot. Afterwards, she sent me one along with a springform pan that fits perfectly inside of it. It took me a while before I first used it, but I sure am glad that I did!
So first of all, for anyone who isn't familiar with the Instant Pot, it is basically an all-in-one device that combines a pressure cooker with a slow cooker, steamer, rice cooker, yogurt maker and electric saute pan. It is super easy to use and you can make practically any of the recipes in my book, The Dirty Vegan Cookbook in it, which I am loving! Here's what I tried in my Instant Pot cooker so far.
The first thing that I made was a field roast celebration roast with potatoes and mushrooms. The seasoning was garlic, ginger, cumin, curry, turmeric, cinnamon, bay leaf, salt and pepper, as well as olive oil while I sautéed, then pats of butter before I pressure cooked it. I have to say, this device keeps the flavor in so nicely, every single bite is so flavorful! I didn't even use broth, just some filtered water, and the broth it made was so packed with flavor; this was such a delightful meal.
The next meal I tried with this Instant Pot was lasagna. I used my go-to lasagna recipe from my cookbook and I don't boil the noodles ahead of time, so it's even easier to prepare. This lasagna came out awesome using the springform pan that my sister-in-law sent along with it. See how it fits right in the pot. Also, the machine came with a steamer shelf/ trivet with handles so I placed the prepared lasagne right on that and lowered it down into the pot that I already had filled with some water. I only pressure cooked it for like 20 minutes and voila! This was such a big hit with the family too.
