Oh Em Gee: Cannoli Overnight Oats Recipe!

The title truly says it all. I created Cannoli flavored overnight oats... with healthy ingredients!!! I cannot even believe how creamy they turned out and pastry-filling-like.

I don’t exactly know what makes this happen, whether it’s the vegan yogurt, peanut butter, cinnamon, pomegranate seeds, chocolate chips, or a combination of it all, but oh man it really tastes more like a dessert than a breakfast! I didn’t even add any sugar.

In typical Cannoli (an Italian pastry), especially the authentic ones made where I grew up, in a small Italian town, there was a little hint of citrus zest or essence used. The zest was usually from an orange, like blood orange. In these overnight oats I used pomegranate seeds and I’m so glad I did. Even having 4 different types of oranges on hand, the pomegranate seeds are not only an easy addition (I used ones from a container, that were ready-to-use), but I think they lend such a nice flavor and texture to the oats. The whole texture and flavor combinations in these oats are just amazing. So here is the recipe, don’t blame me when you are hooked on eating these for breakfast every morning like I became!

Here’s what they looked like at night, right after making them and before putting them in the refrigerator:

Cannoli Overnight Oats

1/2 cup oats (I used old fashioned rolled)

1/2 cup vanilla soy milk

5.3 oz vanilla almond milk yogurt (I used Silk brand)

1/2 banana, thinly sliced

1 tbsp creamy peanut butter

sprinkle or two of ground cinnamon

2 tbsp chocolate chips

2 tbsp pomegranate seeds

In a jar (like a mason jar), combine oats, milk, yogurt, banana slices, peanut butter and cinnamon; mix well with a spoon. Top with layers of chocolate chips and pomegranate seeds then push down a little with the back of the spoon. Cover and refrigerate overnight. Enjoy in the morning (and prepare to be delighted)!
