Homemade Nutter Butter Cookies Recipe
I posted pictures on social of me making these cookies right after I took them out of the oven, waiting for them to cool so that I could fill them. I asked if you wanted the recipe, to see if this would be something everyone would be interested in seeing a blog post on, and so many of you were like YES, NUTTER BUTTERS!!! So here it is, enjoy!
Homemade Nutter Butter Cookies
Makes 1 dozen sandwich cookies
What You'll Need:
1 cup brown sugar (and a little extra for rolling cookies in)
1 cup peanut butter (or nut/ seed butter of your choosing)
1 vegan "egg" (I used VeganEgg by Follow Your Heart)
2 cups all-purpose flour
1/4 cup vegan butter, softened
1/4 cup peanut butter (or nut/seed butter of your choosing)
1 cup powdered sugar
1 tablespoon vegan half-and-half or creamer (I used Ripple brand half-and-half)
What You'll Need to Do:
Preheat the oven to 350 degrees. In a large mixing bowl, cream together 1 cup brown sugar, 1 cup peanut butter, vegan "egg", then slowly mix in flour; combine until you have a cookie dough. Form 24 oblong logs then roll in brown sugar and place on a parchment paper lined baking sheet about 1 inch apart. Flatten with a fork in both directions to resemble texture of a peanut shell. Pinch sides of cookie inward to resemble shape of a peanut. Bake for 10- 12 minutes or until cookies are done, and allow to cool. Mix softened butter, 1/4 cup peanut butter, powdered sugar, and half-and-half together to make frosting, then frost flat part of cookie and top with another cookie to make a sandwich. Enjoy!
